One Pot Creamy Broccoli Pasta

Ingredients
  • 8 oz. medium pasta shells
  • 1 teaspoon light butter
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup fat-free half and half
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon oregano
  • 3 cups broccoli, cut into small pieces
  • 1 1/2 tablespoon lemon juice
  • 3 tablespoons grated Parmesan cheese
  • Salt and pepper, to taste
Instructions
  1. Melt the butter in a large nonstick pot, then sauté the minced garlic.

  2. Add the chicken broth, half and half, onion powder, oregano, salt, and pepper.

  3. Pour in the noodles, cover the pot, and reduce the heat to low. Make sure the liquid is still simmering.

  4. Cook the noodles according to the package directions making sure to occasionally stir them.

  5. Add the broccoli during the last two minutes of cooking time.

  6. Once the cooking time is done remove the lid and add the lemon juice and Parmesan cheese.

  7. Let the pasta stand for 2 minutes to let the sauce thicken.
