One Pot Creamy Broccoli Pasta

Ingredients

  • 8 oz. medium pasta shells
  • 1 teaspoon light butter
  • 3 cloves garlic, minced
  • 2 cups chicken broth (or vegetable broth)
  • 1 cup fat-free half and half
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon oregano
  • 3 cups broccoli, cut into small pieces
  • 1 1/2 tablespoon lemon juice
  • 3 tablespoons grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

  • Melt the butter in a large nonstick pot, then sauté the minced garlic.
  • Add the chicken broth, half and half, onion powder, oregano, salt, and pepper.
  • Pour in the noodles, cover the pot, and reduce the heat to low. Make sure the liquid is still simmering.
  • Cook the noodles according to the package directions making sure to occasionally stir them.
  • Add the broccoli during the last two minutes of cooking time.
  • Once the cooking time is done remove the lid and add the lemon juice and Parmesan cheese.
  • Let the pasta stand for 2 minutes to let the sauce thicken.
