This $10 recipe makes EIGHT Black Bean Burritos!
Welcome back to my new series where I make a recipe that feeds 4 people for less than ten dollars, that are also Weight Watchers friendly. Last week I made $10 Chicken and Spaghetti.
You can have two burritos for only 7 WW points and it will keep you full for hours.
The Benefits of Black Beans:
They’re a good source of protein, which is perfect for a vegetarian meal. Just 1/2 cup of black beans has 9 grams of protein. Protein is great for helping to keep you full.
They’re also a good source of fiber, which makes sure you have a healthy digestive tract. Meaning it helps with constipation.
Another good thing is black beans are low in fat – zero fat to be exact.
The Ingredients:
Pictured is everything I bought from Kroger. I did buy the wrong tortillas, I meant to buy the low carb Kroger brand, which is lower in points.
The tortillas I meant to buy were $.21 more, so I still would have been under budget.
I bought two cans of black beans, which were $.89 each.
The fresh ingredients included red bell pepper, jalapenos, and cilantro. I had a small onion at home that I added to the recipe.
Finally, I bought reduced-fat Mexican shredded cheese, which was $2.49.
One thing I didn’t include was the seasoning. I think most people who cook for themselves have garlic powder, onion powder, salt, and pepper.
I don’t include what I consider to be standard kitchen ingredients. I could, but they would probably be $15 meals then.

How to Make Black Bean Burritos:
To begin, I started by chopping up the vegetables. I removed the seeds from my jalapenos, but if you like the heat you can leave them in.
I heated a nonstick pan over medium heat, sprayed it with cooking oil, then added the vegetables. Let them cook for 3-4 minutes.
While the vegetables were cooking I rinsed and drained the black beans.
Add the black beans to the pan, then add the garlic powder, onion powder, cumin, chili powder, salt, and pepper.
Let that cook for about 5 minutes. During that time you can heat up your tortillas. I place mine in a grill pan for about 1 minute per side. You can also heat them up in the microwave or oven.
Then it’s time to make the burritos. I added about 1/2 cup of the bean mixture to the center of a tortilla.
Top the beans with some cilantro and cheddar cheese. Then, I folded in the sides and rolled it up from the bottom.
Repeat until you have all 8 burritos.
I like to serve my burritos with fat free sour cream and salsa.
This recipe is easy to make, you’ll have a meal ready in less than 30 minutes!

- 30 oz. black beans
- 8 Kroger Carbmaster flour tortillas (or other low point brand)
- 1 red bell pepper
- 1 small yellow onion
- 2 jalapenos
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup cilantro
- 1/2 cup reduced fat Mexican cheese, shredded

Chop the red bell pepper, onion, and jalapenos. Remove the seeds from the jalapenos if you don't want it spicy.

Spray a nonstick pan with cooking spray. Add the vegetables and let them cook for 3-4 minutes over medium heat.

While the vegetables are cooking, drain and rinse the black beans. When the vegetables are done cooking add the black beans.

Season the bean mixture with garlic powder, onion powder, cumin, chili powder, salt, and pepper. Let the bean mixture cook for 5 minutes.

While the beans are cooking heat up the tortillas.

Assemble the burritos by adding about 1/2 cup of the black bean mixture, cilantro and reduced-fat Mexican cheese. Fold in the sides then roll up the burrito.

Optional: serve with fat-free sour cream and salsa.
