$10 Black Bean Burritos

Ingredients

  • 30 oz. black beans
  • 8 Kroger Carbmaster flour tortillas (or other low point brand)
  • 1 red bell pepper
  • 1 small yellow onion
  • 2 jalapenos
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup cilantro
  • 1/2 cup reduced fat Mexican cheese, shredded

Instructions

  • Chop the red bell pepper, onion, and jalapenos. Remove the seeds from the jalapenos if you don't want it spicy.
  • Spray a nonstick pan with cooking spray. Add the vegetables and let them cook for 3-4 minutes over medium heat.
  • While the vegetables are cooking, drain and rinse the black beans. When the vegetables are done cooking add the black beans.
  • Season the bean mixture with garlic powder, onion powder, cumin, chili powder, salt, and pepper. Let the bean mixture cook for 5 minutes.
  • While the beans are cooking heat up the tortillas.
  • Assemble the burritos by adding about 1/2 cup of the black bean mixture, cilantro and reduced-fat Mexican cheese. Fold in the sides then roll up the burrito.
  • Optional: serve with fat-free sour cream and salsa.
