Sausage pancake muffins are the perfect breakfast option that won’t leave you feeling weighed down.
Not only are they easy to make, but they’re also filled with protein and savory flavors that will keep your taste buds happy.

These muffins are the perfect balance of protein and carbs. Plus, they’re easy to make and portable, making them a great option for busy mornings.
To make these delicious and healthy Sausage Pancake Muffins, you will need the following ingredients:
- Bisquick Heart Smart
- Skim milk
- Egg
- Johnsonville cooked turkey sausage links
My go-to sausage links used to be Bob Evan’s sausage links. Using Johnsonville turkey sausage links cuts the points in half, plus they are already fully cooked.

How to make Sausage Pancake Muffins:
One thing you need for this recipe is a mini muffin pan. You can spray the muffin pan with non-stick cooking spray or use mini muffin liners.
Preheat the oven to 350 degrees F.
In a medium mixing bowl add the Bisquick Heart Smart, egg, and skim milk. Stir together until there are no lumps.
Cut each turkey sausage link into 5 pieces.
Add the pancake batter to the mini muffin pan. Fill each muffin about halfway full. Insert a piece of turkey sausage into the center of each muffin.
Bake the muffins 12-15 minutes. Let them cool in the pan for a few minutes before removing them and placing them on a wire rack.
Serve the muffins warm or at room temperature. I like to serve mine with sugar-free syrup.
How to Store and Reheat the Muffins:
One of the best things about these muffins is that they are easy to store and reheat.
Once you’ve made them, simply allow them to cool completely before transferring them to an airtight container or plastic bag. You can store them in the fridge for up to three days.
To reheat the muffins, you have a few options. One is to simply pop them in the microwave for about 30 seconds. This will warm them up nicely and make them ready to eat.
Alternatively, you can place them in a preheated oven at 350 degrees F. for 10 minutes. This will give them a crispy outer layer and make them taste just as good as when they were first made.
If you want to freeze the muffins, you can do so by wrapping them tightly in plastic wrap and then placing them in an airtight container or plastic bag.
They will keep for up to two months in the freezer. To reheat, simply let them thaw in the fridge overnight and then follow the reheating instructions above.
