Sausage Pancake Muffins: A Tasty and Light Breakfast

Bisquick Heart Smart
1 1/4
cups
fat-free skim milk
1
egg

Johnsonville cooked turkey sausage links
Mini muffin pan
Optional: sugar-free syrup
Instructions
Preheat oven to 350 degrees F.
Spray the
mini muffin pan
with non-stick cooking spray or insert
mini muffin liners
.
In a medium mixing bowl add the Bisquick Heart Smart, egg and skim milk. Stir together until there are no lumps.
Cut each turkey sausage link into 5 pieces.
Add the pancake batter to the
mini muffin pan
. Fill each muffin about halfway full. Insert a piece of turkey sausage into the center of each muffin.
Bake the muffins 12-15 minutes. Let them cool in the pan for a few minutes before removing them and placing them on a wire rack.
Serve the muffins warm or at room temperature. I like to serve mine with sugar-free syrup.
