These lightened up raspberry muffins are only 4 points each with Weight Watchers blue, green and purple!
Sometimes my most favorite recipes happen on accident, like these raspberry muffins.
I had a craving for something kind of sweet. I was thinking about cake!
I didn’t want to go to the grocery store, so I had to come up with something using ingredients I already had.

I had Bisquick Heart Smart, which is basically just a healthier version of Bisquick.
I also had raspberries…lots of raspberries. My kids love fruit, so we’re always stocked with it.
Usually we have a lot of strawberries, but my daughter has been eating a lot of raspberries lately.
That’s how I decided on raspberry muffins.
There are a few things I did to lighten up this muffin recipe. The first was using the Bisquick Heart Smart.
Instead of using whole milk I used skim milk.
I did not use oil in the raspberry muffins, instead I used applesauce.
That’s pretty much it. You only need a few basic ingredients for this recipe:
- Bisquick Heart Smart
- Skim milk
- Raspberries
- Sugar
- One egg
- Vanilla extract
- Unsweetened applesauce
It took about 5 minutes to prep, then 15 minutes to bake. Skip the eggs for breakfast and make these muffins instead!
I love adding fat-free whipped cream to muffins and cobblers, so I added a little dollop to my muffin. It hit the spot!

- 1 egg
- 2 cups Bisquick Heart Smart
- 2/3 cup skim milk
- 1/3 cup sugar
- 1 tablespoon applesauce
- 1/2 teaspoon vanilla extract
- 1 cup raspberries

Preheat oven to 400 degrees F. Insert 12 paper baking cups into muffin tin.

Beat the egg in a medium mixing bowl. Add the Bisquick, skim milk, sugar, applesauce and vanilla extract. Stir until combined, but do not over-stir. Fold in the raspberries

Evenly divide the mixture in the muffin tin. Bake 15 minutes or until the tops are golden.
