I love me some taco Tuesday!!
Even though today isn’t Tuesday, that’s ok. I’m just getting you prepared for next Tuesday! Oh who are we kidding, tacos are good every day.
The inspiration for this Taco Pie comes from my Cheeseburger Pie recipe. I love it because it tastes great and it’s very easy to make.

There are six servings in this Taco Pie which is 6 points per serving. It’s a filling meal!
I used 95% fat free ground beef which I browned, then added taco seasoning to. I cooked it according to the directions on the package.
While that was cooking I mixed together the skim milk, eggs and Heart Smart Bisquick.
I added the cooked taco meat to a pie pan. Next I sprinkled on the reduced-fat Mexican cheese, then I poured the Bisquick mixture over it.

I baked it for 25 minutes at 400 degrees.

While it was baking I got my toppings ready. You can do whatever toppings you want. I tried to stick with 0 point toppings. I used lettuce, tomatoes and green onions.
I also used some fat-free sour cream. I like that I can have 2 tablespoons for only 1 point.
Once the taco pie was out of the oven I let it cool for a few minutes, then I added the lettuce, tomatoes and green onions.
As much as I like the Cheeseburger Pie recipe, I like this Taco Pie even more!

- 1 lb. 95% lean ground beef
- 1 oz. taco seasoning
- 1 cup reduced-fat Mexican cheese, shredded
- 2 eggs
- 1 cup fat-free skim milk
- 1/2 cup Bisquick Heart Smart

Preheat oven to 400 degrees F.

Brown the ground beef and drain the fat. Add the taco seasoning and cook according to the directions on the package.

In a mixing bowl add the eggs, skim milk and Bisquick. Whisk until it is well blended.

Spray a baking dish with no-stick cooking spray, then add the beef. Sprinkle the cheese onto the beef, then pour the Bisquick mixture onto it.

Bake 25 minutes, or until cooked through in the center.
