These Blueberry Muffins are lightened up and WW friendly!
When I searched Blueberry Muffins on the WW app it ranged from 7 to 19 points.
My muffins are only 4 points each! That’s for a regular size muffin, not a mini.

How I lightened up these muffins:
Instead of using regular Bisquick I used Bisquick Heart Smart. It was a difference of 5 points. Bisquick Heart Smart also contains zero trans fat.
Using skim milk instead of whole milk also helped reduce points.
Another point saver was using unsweetened applesauce instead of oil.
I used regular sugar in this recipe. If you swap out the sugar for granulated Splenda, it would reduce the points to 3.
How to make Blueberry Muffins:
This recipe is very easy, which I love. It takes about 5 minutes of prep time and 15 minutes to bake.
I add everything to a medium mixing bowl, except for the blueberries.
Then I stir together the Bisquick Heart Smart, egg, sugar, applesauce, skim milk, and vanilla extract.
Once the ingredients are combined I stir in the blueberries. I used fresh blueberries but you could also use frozen ones.
Place cupcake holders into a muffin tin, then evenly divide the mixture in the muffin tin.
Bake the muffins for 15-17 minutes, or until the tops are golden.
I love serving these muffins when they are still warm with a little bit of whipped cream.

- 2 cups Bisquick Heart Smart
- 1 egg
- 1/3 cup sugar
- 1 tablespoon unsweetened applesauce
- 2/3 cup skim milk
- 1/2 teaspoon vanilla extract
- 1 cup blueberries

Preheat oven to 400 degrees F.

In a medium mixing bowl add the Bisquick, egg, sugar, applesauce, skim milk, and vanilla extract. Stir the ingredients together until combined.

Add the blueberries and stir together.

Line a muffin in with cupcake holders. Evenly divide the mixture in the muffin tin.

Bake 15-17 minutes, or until the muffins are golden.
