BLT French Bread Pizza is great for an easy dinner!
This is my third recipe in the last week using bacon. I don’t like wasting food, especially when everything is so expensive.
I also used bacon for Instant Pot Baked Potato Soup and Bacon Cornbread Muffins.

After making this BLT French Bread Pizza I’m officially out of bacon – mission accomplished!
I have a few other French bread pizzas on my website. I love them because they’re easy to make and delicious.
To keep this recipe light I bought a whole wheat French baguette. I cut the loaf in half, then cut each piece in half to give me four equal size pieces of bread.
I used a food scale to make sure each piece of bread was only 2 ounces.
That amount of bread per serving is only 3 points. Not too bad for pizza dough!
Using center cut bacon also helped to keep the points low. Once the bacon was cooked I dabbed it with paper towel to remove any grease.
Instead of using regular mayonnaise I used light mayonnaise.
And finally, I used part-skim shredded mozzarella cheese, instead of regular mozzarella cheese.
How to make BLT French Bread Pizza:
Once I had the French baguette cut into 4 pieces I put them on a baking sheet and lightly spritzed them with olive oil spray.
Next, I put the baguettes in the oven for 5 minutes to toast them.
Cut the cooked bacon into bite-size pieces then set it aside.
Add 1/2 tablespoon of mayonnaise to each piece of bread.
Top the mayonnaise with half of the bacon pieces.
Finally, top the bacon with the cheese. Put it back in the oven for 5 minutes, or until the cheese melts.
Once the pizzas are done baking, top each one with the remaining bacon, lettuce, and tomatoes.

- 4 pieces whole wheat French baguette (2 ounces each)
- 4 slices center cut bacon (cooked and cut into bite-size pieces)
- 2 tablespoons light mayonnaise
- 3/4 cup part-skim mozzarella cheese, shredded
- 1 cup lettuce, chopped
- 1 cup tomatoes, chopped
- Olive oil spray

Preheat oven to 400 degrees F.

Add the baguettes to a baking sheet. Spritz them with olive oil spray then bake for 5 minutes.

Spread 1/2 tablespoon of light mayonnaise onto each baguette.

Top the baguette's with half of the chopped bacon, then add the mozzarella cheese.

Bake for 5 minutes or until the cheese is melted.

Add the lettuce, tomato and remaining bacon. Enjoy!
