It’s another $10 meal idea!
This one involves one of my favorite foods – pizza.
I kept it low in points, but it’s still perfect for a pizza fix.
What I Bought
I went to my usual grocery store, Kroger. I was going to head to Meijer today but when I searched the app a lot of the ingredients were more expensive there.
Not by a lot, but when I’m trying to keep a recipe under $10, every penny counts.
I bought a French baguette for $1.49. It was large enough to make 8 pizzas.
For the vegetables I bought carrots ($1.34), a shallot ($.10), a Roma tomato ($.20), and broccoli ($.55).
Buying a shallot instead of a regular onion helped to save money since it’s smaller and costs less. It still added a delicious onion flavor to the French bread pizza.
Dei Fratelli is the pizza sauce I typically buy, and it’s one of the least expensive ones, only $1.59.
Finally, I bought the Kroger brand part-skim shredded mozzarella cheese for $2.49.
The total spent was $7.21, and that’s enough for 8 French bread pizzas.
I also topped my pizza with Italian seasoning, which is optional. If you don’t have Italian seasoning you can buy an inexpensive brand for $1.50 and still be under $10.00.

How to Make Vegetable French Bread Pizzas
To keep the pizza low in points, I didn’t want to use too much bread.
I used my food scale to weigh the bread. I didn’t want each piece to be more than 2 ounces. If it was more than 2 ounces I simply pulled out some of the inside of the bread.
Place the French baguette slices on a baking sheet and spray them with olive oil spray. Bake in the oven for 5 minutes so they get slightly toasted.
While the bread was in the oven I chopped up the veggies.
Spread the pizza sauce over the bread, then top with the mozzarella cheese. Add the vegetables, then sprinkle with Italian seasoning.
Put the pizzas back in the oven for 5 minutes, or until the cheese melts.

I like to serve my French bread pizza with a tasty salad.
- Caesar salad
- Kale salad
- Italian salad
- Classic garden salad

- 4 pieces French baguette (2 ounces each)
- 3/4 cup pizza sauce
- 3/4 cup part-skim mozzarella cheese, shredded
- 1 Roma tomato, sliced
- 2 baby carrots, sliced
- 1 shallot, chopped
- 1 broccoli crown, chopped
- Olive oil cooking spray
- Optional: Italian seasoning

Preheat oven to 400 degrees F.

Add the French baguette pieces to a baking sheet. Spray with olive oil spray and put in the oven for 5 minutes to toast.

Spread the pizza sauce over the bread, then add the cheese. Top the pizzas with the vegetables.

Put the pizzas in the oven for 5 minutes, or until the cheese melts.
