This is an easy pizza recipe perfect for busy weeknights!
Plus it’s been lightened up to make it WW friendly.

To help keep this recipe light I used sugar free BBQ sauce. G Hughes original sugar free BBQ sauce is only 1 point for 1/4 cup.
According to the WW app, regular BBQ sauce is 7 points for 1/4 cup.
Using part skim mozzarella cheese also helped to save points.
I used a food scale to weigh my bread. Each baguette was 2.5 ounces.
How to make BBQ French Bread Pizza:
The first thing I did was I cut and weighed the bread. I sprayed it with olive oil spray and baked it for 5 minutes so it could get toasted.
To save time I bought a rotisserie chicken from the grocery store. I removed the skin from one breast, shredded it and added it to a bowl.
Add 1-2 tablespoons of the BBQ sauce and mix together.

Once the bread is toasted, add 1 tablespoon of BBQ sauce.

Next, I added the chicken. I like to put the chicken under the cheese so it doesn’t dry out.

Top the chicken with the cheese.

Then add the red onion.

Put the BBQ Chicken French Bread Pizzas back in the oven for 5 minutes or until the cheese melts.
Once the pizza is out of the oven I topped it with cilantro.
This recipe can easily be doubled if you want to make more than 2 pizzas.

Yield: 2 servings

- 2 pieces whole wheat baguette (2.5 oz. each)
- 1/4 cup sugar free BBQ sauce, divided
- 1 boneless, skinless chicken breast, cooked and shredded
- 1/4 cup part-skim mozzarella cheese, shredded
- Red onion, cut in thin slices
- 1 tablespoon fresh cilantro, chopped

Preheat oven to 400 degrees F.

Place the baguettes on a baking sheet. Spray with olive oil and bake for 5 minutes.

In a small bowl mix together the chicken and 1-2 tablespoons of BBQ sauce.

Add 1 tablespoon of BBQ sauce to each pizza. Then top with the chicken, cheese and red onion.

Bake 5 minutes or until the cheese is melted.

Top with fresh cilantro.
