I’ve been a little obsessed with chicken, bacon and ranch lately. It’s so goood!!
I figured since I have all of the ingredients I would come up with another recipe.
This pizza is NOT made with two ingredient dough. Instead I used a premade thin crust pizza.
The Pillsbury thin crust pizza dough is only 28 points for the whole thing. It’s pretty big too!
Cutting the pizza into 12 pieces makes each piece about two points each without any toppings.
This recipe is also perfect for a cooked rotisserie chicken. It makes prep that much easier!
To keep this pizza low in points I had to come up with a sauce that wasn’t too high in points.
I combined reduced-fat cream cheese, fat-free Greek yogurt and ranch seasoning. It was only 7 points!
Because you mix together the cream cheese, yogurt and ranch you really can’t taste the yogurt.
Since turkey bacon is lower in points than regular bacon I used that. If you really don’t like turkey bacon you can use regular bacon. It won’t cost you much in points.
You have to pre-bake the dough for 6 minutes without any toppings. While that was baking I got my ranch sauce ready and cut up the chicken and bacon.
Next you add the ranch sauce to the pizza followed by the chicken, bacon and mozzarella cheese. Then put the pizza back into the oven for 6-8 minutes.
Once it’s done baking I topped it with green onions. This pizza is delicious! It’s 4 points per slice for blue and purple, 5 points for green.
Yield: 12 servings (4 points per serving for blue and purple, 5 points for green)
- 1 pre-made Pillsbury thin pizza crust
- 1/4 cup reduced-fat cream cheese
- 1/4 cup fat-free Greek yourt
- 2 teaspoons ranch seasoning
- 2 cups cooked chicken breast, chopped
- 3 slices turkey bacon, cooked and chopped
- 1 cup part-skim mozzarella cheese, shredded
- 2 green onions, chopped
Preheat oven to 400 degrees F.
Spray a baking sheet with no-stick cooking spray. Unroll the pizza dough on the baking sheet.
Bake the pizza dough for 6 minutes.
In a small bowl mix together the cream cheese, yogurt and ranch dip.
Take the pizza crust out of the oven. Evenly spread the ranch mixture over the pizza.
Add the chicken and turkey bacon to the pizza then top with the mozzarella cheese.
Bake the pizza 6-8 minutes, or until the cheese is completely melted.
Top the pizza with green onions and serve.
