This Chicken Ranch Pie is going to be your new favorite dinner!
Not only is it delicious but it’s low in points. And filling too! It’s 4 points per serving for blue and purple, 6 points for green.

The original recipe is from Plain Chicken. Like most of her recipes it’s delicious, but I knew I could lighten it up.
In the Plain Chicken recipe the ingredients are:
- Chicken
- Bacon
- Ranch dressing
- Cheddar cheese
- Bisquick
- Milk
- Eggs
To lighten it up I started with the ranch dressing. Instead of regular ranch dressing I used light ranch dressing. It’s 11 points for light ranch dressing vs. 18 points for regular ranch.
Instead of using regular bacon I used turkey bacon. Three slices of turkey bacon is 3 points vs. regular bacon for 5 points.
I used reduced-fat shredded cheese instead of regular cheese. That was a savings of 6 points.
Regular Bisquick is 7 points for 1/2 cup. Bisquick Heart Smart is 6 points for 1/2 cup. It’s only a difference of 1 point but that’s what I always have on hand so that’s what I used.
The last change I made was the milk. Instead of using regular whole milk I used skim milk. It saved me 4 points.
Making the minor changes that I did saved 20 points all together!
It really is easy to take one of your favorite recipes and lighten it up. Just because something doesn’t seem healthy doesn’t mean you can’t make a few changes to still enjoy it.
This Chicken Ranch Pie is an easy weeknight meal. It’s also perfect for using a cooked rotisserie chicken.

Yield: 8 servings (4 points per serving for blue and purple, 6 points for green)

- 2 cups boneless, skinless chicken breast, cooked
- 3 slices turkey bacon, cooked and chopped
- 1/2 cup bottled light ranch dressing
- 1 cup reduced-fat Mexican cheese, shredded
- 1/2 cup Bisquick Heart Smart
- 1 cup fat-free skim milk
- 2 eggs

Preheat oven to 400 degrees F. Spray a 9-inch pie plate with no-stick spray.

Combine cooked chicken, bacon, 1/2 cup cheese and light ranch dressing. Stir together and spread into the bottom of the pie plate.

Add the Bisquick, milk and eggs to a mixing bowl and stir together. Pour over the chicken mixture in a pie plate.

Bake for 25 minutes then sprinkle with remaining cheese. Bake an additional 5 minutes, until cheese is melted.
