These Breakfast Rolls are the perfect recipe for two ingredient dough!

Using the two ingredient dough helps to keep them low in points. I was able to make 10 rolls, but I’ve also made 12 in the past.
There is so much you can do with these Breakfast Rolls! I filled mine with scrambled eggs, turkey bacon, cheese and onion.

I have also done ham, green pepper, onion, scrabled eggs and cheese. That was delicious too!
If you switch up the ingredients just make sure you double check the points.
I’m going to be honest, I don’t always love working with the two ingredient dough. Mainly because it’s sticky.
Over the years I have found a few tricks that make it easier to work with. One thing that helps me a lot is spraying my hands with cooking spray. That keeps the dough from sticking to my fingers.
Another thing I do is use a scraper when working with the dough. It’s especially helpful for recipes like these Breakfast Rolls.

I slide the scraper under the dough to loosen it from the counter as I roll it up. I can’t imagine rolling the dough up without a scraper.

Yield: 10 servings (3 points per serving for blue and purple, 4 points for green)
- 1 cup fat free plain Greek yogurt
- 1 cup self-rising flour
- 4 eggs (save one for the egg wash)
- 3 slices turkey bacon, cooked and chopped
- 2 tablespoons onions, chopped
- 1 cup reduced fat Mexican cheese, shredded
- Salt and pepper, to taste

Preheat oven to 350 degrees F.

Scramble and cook 3 of the eggs. Set aside to cool.

Combine the Greek yogurt and self-rising flour in a bowl. Knead dough for 2 minutes.

Sprinkle dough onto your work surface and roll out dough to 1/4 inch. Cut the dough into a rectangle and discard the extra dough.

Spread the scrambled eggs over the dough. Leave about 1 inch of the perimeter of the dough without ingredients.

Add the bacon, onions and 1/2 cup of the cheese.

Starting at the bottom of the dough, roll up towards the top. Cut into 10 pieces and place the rolls into a 9×13 baking pan sprayed with cooking spray.

Whisk the last egg in a bowl and add a tablespoon of water. Brush the egg wash over the dough.

Bake for 30 minutes. Remove from the oven and sprinkle the remaining half cup of cheese onto the breakfast rolls. Put back in the oven for 5 minutes, or until the cheese is melted.
