Cilantro Lime Chicken

This Cilantro Lime Chicken is delicious and easy! It can be made in the slow cooker or Instant Pot, both ways are very easy.  

I tend to use my Instant Pot more than my slow cooker. It’s quicker and I think it’s easier to clean.

The one thing I don’t like about my slow cooker is cleaning it, because of how heavy the insert is.

Either way you choose to make this Cilantro Lime Chicken it’ll be delicious!

It’s also low in points. For blue and purple it is 0 points and for green it is 1 point per serving.

You can use this chicken to make tacos or you can eat the chicken on its own to keep it really low in points. I prefer the tacos. 🙂

I used 1 lb. of boneless, skinless chicken breasts. If you prefer chicken thighs you can use those instead but it would change the point value.

To make this in the Instant Pot I added 1 cup of chicken broth to the pot followed by the juice of 2 limes, 2 cloves of garlic minced, cumin, chili powder and salt.

Next I locked the lid on the Instant Pot and cooked it on high pressure for 10 minutes. I let the Instant Pot do a natural relase for 10 minutes, then released the pressure and removed the lid.

I removed the chicken from the Instant Pot and shredded it with a fork. Then I put the chicken back into the liquid.

This chicken tastes great leftover too! If you save the chicken make sure you keep it in the liquid. That will keep the chicken from drying out.

Ingredients
  • 1 lb. boneless, skinless chicken breasts
  • 1 cup chicken broth
  • Juice from two limes
  • 2 cloves of garlic, minced
  • 1 cup cilantro, divided
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
Instructions
For the Instant Pot:
  1. Add the chicken broth to the Instant Pot. Add the juice of 2 limes, cumin, chili poder, salt and 1/2 cup cilantro.

  2. Stir together then add the chicken. Place the lid on the Instant Pot and lock it. Make sure the lever is set to seal. Press the manual button and set the time for 10 minutes.

  3. When the time is up let the pressure manually release for 10 minutes, then release the pressure and remove the lid.

  4. Remove the chicken and shred it with a fork. Place the chicken back in the liquid with the remaining cilantro. Keep the chicken in the liquid until you are ready to serve it.

For the slow cooker:
  1. Add the chicken broth to the slow cooker. Add the juice of 2 limes, cumin, chili poder, salt and 1/2 cup cilantro.

  2. Stir together and add the chicken. Place the lid on the slow cooker and cook on low for 6 hours.

  3. Remove the chicken and shred it with a fork. Place the chicken back in the liquid with the remaining cilantro. Keep the chicken in the liquid until you are ready to serve it.
