These Bacon Cornbread Muffins are the perfect side dish for any dinner!
They go great with chicken, steak, pork or fish.
They’re also easy to make!

What you need to make Bacon Cornbread Muffins:
- Jiffy cornbread mix
- Egg (1)
- Skim milk
- Center cut bacon
- Chives
I had center cut bacon leftover from when I made Instant Pot Baked Potato Soup. I was trying to think of how I could use it up and I thought about cornbread.
Adding bacon and chives to cornbread turned out fantastic!
How to make Bacon Cornbread Muffins:
The first thing I did was cooked 3 slices of bacon. I just cooked them in a frying pan but you can also bake them in the oven.
I drained the bacon and got rid of any extra grease then cut it into small pieces.
Chop the chives into small pieces.
In a medium bowl add the cornbread mixture, egg, skim milk, bacon and chives.
Stir everything together with a wooden spoon.
I used a mini muffin tin for this recipe. Spray it with nonstick cooking spray then add 1 tablespoon of the cornbread mixture to 22 of the mini muffin holes.
Place the muffin tin on the middle rack of the oven and bake at 400 degrees for 7-9 minutes.
Most of the points in these cornbread muffins come from the cornbread mix itself.
To keep from making it too high in points I used skim milk and center cut bacon.

- 1 box Jiffy cornbread mix (8.5 ounces)
- 1 egg
- 1/3 cup skim milk
- 3 slices center cut bacon, cooked and cut into small pieces
- 2 tablespoons chives, chopped

Preheat oven to 400 degrees F. Spray a mini muffin tin with nonstick cooking spray.

In a medium bowl add the cornbread mix, egg, milk, bacon and chives. Use a wooden spoon and stir together.

Use a tablespoon to add the cornbread mixture to 22 of the 24 muffin holes.

Place in the oven on the middle rack and bake 7-9 minutes.
