Bacon Cornbread Muffins

Ingredients

  • 1 box Jiffy cornbread mix (8.5 ounces)
  • 1 egg
  • 1/3 cup skim milk
  • 3 slices center cut bacon, cooked and cut into small pieces
  • 2 tablespoons chives, chopped

Instructions

  • Preheat oven to 400 degrees F. Spray a mini muffin tin with nonstick cooking spray.
  • In a medium bowl add the cornbread mix, egg, milk, bacon and chives. Use a wooden spoon and stir together.
  • Use a tablespoon to add the cornbread mixture to 22 of the 24 muffin holes.
  • Place in the oven on the middle rack and bake 7-9 minutes.
