Cornbread Waffles with Chili

This is my new favorite comfort food meal!

I love cornbread with my chili so I figured why not try something different? That’s how I came up with Cornbread Waffles with Chili.

The bonus is it’s an easy 30 minute meal!

This recipe makes 8 servings so it’s also great for leftovers.

With Weight Watchers Personal Points program I can have one cornbread waffle with 1 1/2 cups of chili for 7 points. It’s a filling meal for not a lot of points.

How to make Cornbread Waffles with Chili:

I made my homemade chili in a Dutch oven, a soup pot works too. I used 95% lean ground beef. One pound was 14 points. I started by browning the ground beef with one chopped onion and 2 cloves of minced garlic.

Once the ground beef was browned I drained the grease. Then it was time to add the seasonings.

Add in the chili powder, cumin, oregano, paprika, cayenne pepper, salt and black pepper. Stir it together with the meat.

Next add the crushed tomatoes, tomato sauce and Worcestershire sauce. Mix it up on medium-high heat until it starts to simmer.

Let the chili simmer for 20 minutes.

While that’s cooking you can make the cornbread waffles. I used a mini waffle maker. This is the one I have:

Mix together a box of Jiffy cornbread, one egg, skim milk and unsweetened applesauce. Stir together with a rubber spatula.

Spray the preheated waffle iron with nonstick cooking spray and add 1/4 cup of the cornbread batter. Once the waffle iron starts steaming it should be done.

I was able to make 8 mini waffles with the cornbread batter.

Pour the chili over the waffle and add your favorite toppings. Green onions, cheddar cheese and sour cream are some of my favorites. Just add any points if necessary.

Ingredients
  • 1 lb. 95% lean ground beef
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 2 teaspoons oregano
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper
  • 28 oz. crushed tomatoes
  • 30 oz. tomato sauce
  • 2 splashes Worcestershire sauce
  • 1 (8.5 oz.) box Jiffy cornbread
  • 1 egg
  • 1/2 cup skim milk
  • 2 tablespoons unsweetened applesauce
Instructions
  1. Brown ground beef with onion and garlic in a Dutch oven or soup pot.

  2. Drain the grease. Add the chili powder, cumin, salt, pepper, oregano, paprika and cayenne pepper, stir together.

  3. Add the crushed tomatoes, tomato sauce and Worcestershire sauce. Mix together. Simmer for 20 minutes.

  4. While the chili is cooking make the cornbread waffles. Add the Jiffy mix, egg, skim milk and applesauce to a mixing bowl. Stir together with a rubber spatula.

  5. Preheat the mini waffle maker. Spray with nonstick cooking spray and add 1/4 cup of the cornbread batter.

  6. Once the mini waffle maker starts steaming remove the waffle. Repeat until you have 8 mini waffles.

  7. Each serving is one waffle with 1 1/2 cups of chili. Add your favorite chili toppings.
