You’re going to love this Tater Tot Breakfast Casserole! It’s perfect for a weekend breakfast.

To help keep this recipe low in points I used turkey sausage, 8oz. of Jennie-O turkey breakfast sausage.
I also used skim milk and reduced fat cheese.
For the tater tots I counted out 30 which was 16 points.
How to make Tater Tot Breakfast Casserole:
Start by browning the turkey sausage. As it cooks break it up into small pieces. Drain the sausage when it’s done cooking.
Add the tater tots, cheese and sausage to a large bowl and mix together.
Spray a 9×9 baking dish with nonstick cooking spray and add the sausage mixture.
In a medium bowl whisk eggs, skim milk and seasonings.
Pour the egg mixture over the sausage mixture. Then it’s off to the oven to bake.
I let mine bake for 45 minutes, or until the eggs are set.
This breakfast casserole is delicious and filling. I like to serve it with some fresh fruit, a little bit of sweet with the savory.
It’s the perfect dish for a family breakfast! It’s also great for meal prep.

- 8 oz. Jennie-O breakfast turkey sausage
- 30 tater tots
- 1 cup reduced fat Mexican cheese, shredded
- 4 eggs
- 1 cup skim milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon garlic powder
- 1/8 teaspoon onion powder

Preheat oven to 350 degrees F.

Cook sausage over medium heat, breaking up into small pieces, then drain.

In a large bowl add the tater tots, cheese and sausage. Mix together.

Spray a 9×9 baking dish with nonstick cooking spray. Add the sausage mixture to the baking dish.

In a medium bowl whisk together the eggs, skim milk and seasonings. Pour over the sausage mixture.

Bake uncovered 45 minutes or until the eggs are set.
