This Bacon Spinach Quiche is to die for!
It’s lightened up but so full of flavor. A must serve for any brunch or breakfast!
You could even make it for your breakfast meal prep.

To keep this recipe easy I used a store bought pie crust. I’m not much of a baker as you can probably tell by what my quiche crust looks like. 🙂
It may not be the prettiest looking quiche but it is absolutely delicious!
Here’s what you need to make Bacon Spinach Quiche:
- Store bought pie crust
- Eggs
- Center cut bacon
- Onion
- Garlic
- Salt & pepper
- Skim milk
- Reduced fat Mexican cheese, shredded
- Baby spinach
I used center cut bacon because it’s a little lower in points. I only used 3 pieces but I cooked the onion and spinach with it so the quiche was full of bacon flavor.
You could even make this quiche lower in points by leaving out the pie crust. I would reduce the baking time if you’re not using the pie crust, bake until the center is cooked through.
One thing I love about quiche is it’s so easy to mix it up and change the ingredients. I used my Caprese Quiche recipe as a starting point for this Bacon Spinach Quiche.
The pie crust, eggs, skim milk, cheese, salt and pepper are all the same amounts.
For the Caprese Quiche I used part skim mozzarella cheese and for the Bacon Spinach Quiche I used reduced fat Mexican cheese.
Either type of cheese will work for this quiche.
The most time consuming part of this recipe is the baking – which is 45 minutes. But it’s so worth it!

Yield: 8 servings (5 points per serving for blue and purple, 6 points for green)
- 1 store bought pie crust
- 3 slices center cut bacon, cut into small pieces
- 1/4 cup yellow onion, chopped
- 1 clove garlic, minced
- 1 (packed) cup baby spinach
- 6 eggs
- 1/2 cup skim milk
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup reduced fat Mexican cheese, shredded

Preheat oven to 350 degrees F.

Add the bacon to a frying pan. After 3 minutes add the onion. Cook until the bacon is mostly cooked and the onions are soft, about 5 minutes.

Add the minced garlic to the frying pan and stir for 20 seconds, then add the spinach. Once the spinach has shrunk remove from heat.

Add the eggs, milk, salt and pepper to a large mixing bowl. Whisk together.

Place the pie dough into a 9 inch pie dish. Add the spinach mixture to the bottom then add the cheese. Pour the eggs over the cheese and spinach.

Bake 45 minutes or until the center is set.
