I love Panera Bread’s Broccoli Cheddar Soup. I was checking the WW app to see how many points it is, it said 1 cup is 8 points for my Personal Points.
Although the soup is filling and delicious, that seemed like a lot of points to me. I knew I could lighten it up!
With my recipe I can have 1 1/2 cups for only 5 points.

There’s a couple of things I did to lighten up this recipe. Instead of using heavy cream I used fat free half and half.
I used 3/4 cup of fat free half and half which was 4 points. The same amount of heavy cream is 34 points.
That small change saved 30 points!
Instead of using full fat cheese I used reduced fat cheese. That helped to save some points too.
I also used light butter and limited it to only 1/2 tablespoon.
How to make Broccoli Cheddar Soup:
I started by melting the butter in a Dutch oven, you can also use a soup pot.
Add the chopped celery, carrots and onion then cook for 5 minutes, add the minced garlic the last minute.

Next you want to add the flour to the vegetables and stir.

Slowly stir in the chicken broth.

Then add in the broccoli. I used 12 oz. of frozen chopped broccoli.

Bring to a boil then turn it on medium heat to simmer for 10 minutes.
Add the reduced fat sharp cheddar cheese.

Stir until the cheese is melted then add in the half and half. Taste the soup and add salt and black pepper.
That’s all there is to it! It’s such an easy and delicious soup recipe.
If you want to make it vegetarian friendly you can use vegetable broth instead of chicken broth.


Yield: 6 servings (1 1/2 cups per serving)

- 1/2 cup onion, chopped
- 2 cloves garlic, minced
- 1/2 tablespoon light butter
- 1/4 cup all purpose flour
- 4 cups chicken broth
- 12 oz. frozen chopped broccoli
- 1 1/2 cups reduced fat sharp cheddar cheese
- 3/4 cup fat free half and half
