Weight Watchers Broccoli Cheddar Soup

Ingredients

  • 1/2 cup celery, chopped
  • 1/2 cup carrots, chopped
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/2 tablespoon light butter
  • 1/4 cup all purpose flour
  • 4 cups chicken broth
  • 12 oz. frozen chopped broccoli
  • 1 1/2 cups reduced fat sharp cheddar cheese
  • 3/4 cup fat free half and half

Instructions

  • Melt the butter in a Dutch oven or soup pot. Add the celery, carrots and onion, cook for 5 minutes. Add the minced garlic the last minute.
  • Add the flour and stir well.
  • Slowly stir in the chicken broth. Add the broccoli and simmer for 10 minutes.
  • Add the sharp cheddar cheese and stir until the cheese is melted. Stir in the half and half. Enjoy!
