Weight Watchers Broccoli Cheddar Soup

celery, chopped

carrots, chopped
1/2

onion, chopped

garlic, minced

light butter

all purpose flour

chicken broth

frozen chopped broccoli

cups
reduced fat sharp cheddar cheese

cup
fat free half and half
Instructions
Melt the butter in a
Dutch oven
or soup pot. Add the celery, carrots and onion, cook for 5 minutes. Add the minced garlic the last minute.
Add the flour and stir well.
Slowly stir in the chicken broth. Add the broccoli and simmer for 10 minutes.
Add the sharp cheddar cheese and stir until the cheese is melted. Stir in the half and half. Enjoy!
