I love using teriyaki sauce as a marinade. It gives meat so much flavor!
My Mom used to marinate filet mignon in teriyaki sauce, and it was delicious.
I still make those filets for special occasions.

This time I marinated chicken breasts in teriyaki sauce. It was delicious in these Teriyaki Chicken Quesadillas.

Quesadillas are perfect for lunch or dinner. Teriyaki Chicken Quesadillas are also great for meal prep.
After marinating and cooking the chicken breast, I cut it into bite-size pieces. You can keep it in an airtight container in the fridge for 3-4 days.
Cut up the pineapple, red pepper and scallions and keep them in separate airtight containers in the fridge.
If you want a quesadilla, you can grab all of the ingredients and add it to the tortilla.
As always I used Ole Xtreme high fiber tortillas. I love that they’re only 1 point each.
When you make quesadillas, you want to keep all of your ingredients on one half of the tortilla.
My first layer is always the cheese. I like having the cheese on the bottom of the tortilla to make sure it melts.
From there I added the chicken, pineapple, red pepper and scallions.





You want to cook the tortilla in a preheated skillet. I usually do 3-4 minutes on each side once the tortilla is slightly brown.
I added some fat-free sour cream and chopped red onion to the top of my quesadillas.

- 1/2 lb. boneless, skinless chicken breast
- 1/2 cup teriyaki sauce
- 4 Ole Xtreme high fiber tortillas
- 1 cup part-skim mozzarella cheese, shredded
- 1 cup pineapple, chopped
- 1/2 red bell pepper, chopped
- 1 scallion, chopped

Add the chicken and teriyaki sauce to a zip-up bag. Let the chicken marinate for 1 hour up to overnight in the fridge.

Cook the chicken breast in a nonstick skillet or bake in the oven. Once cooked, cut the chicken into bite-size pieces.

Add 1/4 cup of cheese, chicken, pineapple, red pepper and green onion to once half of the tortilla.

Fold the top half of the tortilla over and place the quesadilla in a preheated skillet. Cook 3-4 minutes on each side.

Repeat with the remaining ingredients until all four quesadillas are made.
