Bread Pudding is typically a dessert, but it’s also great for breakfast! It’s quite similar to a baked French toast.
This recipe is lightened up and has only 3 points per serving.

How I lightened it up:
I used bread that is only 1 point per slice. I prefer white or Italian bread, so I used Aunt Millie’s Live Carb Smart white bread.
To make the best bread pudding possible, the bread should be stale.
The night before I made the bread pudding, I left the bread out. It was nice and dry the following day.
Instead of using cream or milk, I used unsweetened almond milk. It was only 1 point for 2 cups.
Rather than using sugar, I used granulated Splenda.

How to make Caramel Apple Bread Pudding:
Like I mentioned before, bread pudding is best when the bread is dried out. I leave the bread slices out the night before.
To a large mixing bowl, add the almond milk and eggs, and whisk together.
Next, add the cinnamon, vanilla extract, and Splenda and whisk together.
Add the apples and bread to the mixing bowl and stir together.
Spray an 8×8 baking dish with nonstick cooking spray and pour in the bread pudding mixture.
Bake for 40-45 minutes at 350 degrees F.
Let the bread pudding cool slightly, then top it with the caramel syrup.

Yield: 6 servings

- 9 slices Aunt Millie's Live Carb Smart white bread (or another bread that is 1 point per slice)
- 2 cups plain, unsweetened almond milk
- 3 eggs
- 1/2 teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1/2 cup granulated Splenda
- 1 Granny smith apple, peeled and chopped into small pieces
- 2 tablespoons Smucker's sugar-free caramel syrup

Cut the bread slices into 9 pieces per slice. Stale bread works best, or you can let the bread dry out over night.

In a large mixing bowl, whisk together the eggs and almond milk. Add in the cinnamon, vanilla extract, and Splenda and whisk together.

To the mixing bowl, add the chopped apple and bread. Stir together.

Spray an 8×8 baking dish with nonstick cooking spray. Pour in the bread pudding mixture.

Bake for 40-45 minutes. Let the bread pudding cool slightly, then drizzle on the caramel syrup.
