This quesadilla is so simple yet so delicious!
It has the classic flavor of a Philly cheesesteak, but it’s much lower in points.

How I kept it light:
Instead of using a sub bun which would be loaded with points, I used a low point quesadilla.
I really like the Mission Carb Balance Tortillas. They’re low carb but still taste like a regular tortilla. Plus, they’re only 2 points each.
You want to choose a lean cut of steak. A strip steak, flank steak, or filet are all good options. Make sure to remove any extra fat.
To lighten up the cheese I used part-skim mozzarella cheese. Most cheesesteaks use provolone, American cheese, or Cheez Whiz.
How to make a Cheesesteak Quesadilla:
Slice the steak thin and remove any fat.
Add it to a warm skillet and season with salt and pepper.
While the steak is still pink add in the minced garlic. Stir together with the steak and move it to the side.
Pour in the onion and green pepper. Let it cook for 3-5 minutes, depending on how cooked you like it.
I like the onions and green pepper to be crispy still so I only cooked them for 3 minutes.
Lay out the tortilla and add the cheese to one half. Top the cheese with the steak and vegetables and fold the top over.
Spray a skillet with cooking spray and add the quesadilla. Cook for 2 minutes on each side.

- 4 oz. lean steak, sliced thin and trimmed of fat
- 1 clove garlic, minced
- 2 tablespoons green pepper, chopped
- 2 tablespoons yellow onions, chopped
- 2 tablespoons part-skim mozzarella cheese, shredded
- 1 Mission Carb Balance Tortilla
- Salt and pepper, to taste

Add the steak to a heated skillet. Season with salt and pepper. Let the cook steak until slightly browned then add the garlic. Stir together and push to the side.

Add the onion and green pepper to the skillet. Cook for 3-5 minutes.

Lay out the tortilla. Add the cheese to half of the tortilla, top with the steak and veggies, then close the tortilla.

Spray the skillet with cooking spray then add the quesadilla. Cook for 2 minutes on each side.
