This is a delicious low point salad!
The baked tortilla bowl makes it extra fun. Plus, it’s low in points and easy to make.

I bought these taco salad bowl makers from Amazon, and they are awesome!
All you have to do is put the tortilla in the bowl. You barely have to press it in, it’s super easy.
You don’t even have to spray the bowls with cooking spray.

How I kept this salad low in points:
This salad is filled with zero point vegetables and beans.
Lettuce, tomatoes, corn, black beans and red onion are all zero points.
If you want to make this salad even more filling you can add some grilled chicken breast, which won’t change the points.
The tortillas I used were Mission Carb Balance, which are 2 points each. Baking the tortillas instead of frying helped to save a lot of points.
To top the salad I made a creamy cilantro lime dressing. I kept it low in points by using fat-free sour cream.
Other ingredients in the dressing are cilantro, lime juice, cumin, garlic, salt, and water. All of these ingredients are zero points.
The only two things that add points to this recipe are the tortillas and the fat-free sour cream.
How to make Southwestern Tortilla Bowls:
Start by preheating the oven to 350. Add the tortillas to the taco salad bowl makers and place in the oven 10-15 minutes.
While the tortillas are baking, I started making the dressing.
Add the sour cream, cilantro, lime juice, cumin, minced garlic, salt and water to a blender or magic bullet.
Blend the dressing until it is smooth.
In a large mixing bowl I added the lettuce, tomatoes, red onion, corn, and black beans. Pour in the salad dressing then toss the salad until combined.
Once the tortillas are done baking, divide the salad into the two tortilla bowls.

Yield: 2 servings (4 points per serving)

- 1/2 cup cilantro
- Juice from 1/2 lime
- 1 clove garlic, minced
- 1/8 teaspoon cumin
- 1 tablespoon water
- Pinch of salt
- 2 Mission Carb Balance tortillas
- 4 cups shredded lettuce
- 1 cup cherry tomatoes, cut in half
- 1/2 cup corn
- 1/2 cup black beans (drained and rinsed)
- 1/4 red onion, diced

Preheat oven to 350 degrees F.

Place in the oven 10-15 minutes.

Add the sour cream, cilantro, lime juice, garlic, cumin, water, and salt to a blender or magic bullet. Blend until the dressing is smooth.

In a large mixing bowl add the lettuce, tomatoes, corn, black beans, and red onion. Pour the salad dressing and toss until combined.

Add the salad to the tortilla bowls.
