Ingredients
For the dressing:
  • 1/2 cup fat-free sour cream
  • 1/2 cup cilantro
  • Juice from 1/2 lime
  • 1 clove garlic, minced
  • 1/8 teaspoon cumin
  • 1 tablespoon water
  • Pinch of salt
For the salad:
  • 2 Mission Carb Balance tortillas
  • 4 cups shredded lettuce
  • 1 cup cherry tomatoes, cut in half
  • 1/2 cup corn
  • 1/2 cup black beans (drained and rinsed)
  • 1/4 red onion, diced
Instructions
  1. Preheat oven to 350 degrees F.

  2. Add the tortillas to the taco salad bowl makers.

  3. Place in the oven 10-15 minutes.

  4. Add the sour cream, cilantro, lime juice, garlic, cumin, water, and salt to a blender or magic bullet. Blend until the dressing is smooth.

  5. In a large mixing bowl add the lettuce, tomatoes, corn, black beans, and red onion. Pour the salad dressing and toss until combined.

  6. Add the salad to the tortilla bowls.
