Air Fryer Meatballs with Easy Gravy (Oven Instructions Included)

Meatballs in the air fryer are my new favorite thing!

They’re crispy on the outside, and juicy on the inside.

Plus they’re easy to make and don’t take long to cook.

Having an air fryer really is a game changer, especially if you have teenage kids.

My kids put everything in the air fryer! It’s so much easier than waiting for the oven to heat up, plus the cooking time is shorter.

I bought frozen chicken patties for my daughter. She’s been cooking them in the air fryer and making a quick chicken sandwich for lunch. She loves it!

These meatballs only take 9 minutes to cook in the air fryer.

How I kept this recipe low in points:

Using 96% lean ground beef helped keep these meatballs light. One pound is only 12 points.

There is no butter or oil used to cook the meatballs. The air fryer does all of the work.

The easy gravy doesn’t use any pan drippings. I only used Better Than Bouillon beef base, water, cornstarch and some seasonings.

Of course, the meatballs can be served with or without the gravy, but the gravy doesn’t add any points.

With the current plan, you can have 4 meatballs for only 3 points. They’re great served over rice, cauliflower rice, or pasta.

How to make Air Fryer Meatballs with Easy Gravy:

Start by adding the breadcrumbs, egg, skim milk, Parmesan cheese, minced garlic, salt, pepper, parsley, and Italian seasoning to a large mixing bowl.

Mix everything together until well blended.

Add the ground beef and combine.

I used a cookie scoop to shape the meatballs, then added them to the air fryer basket.

Make sure the meatballs are in a single layer, not touching.

Cook the meatballs in the air fryer at 400 degrees for 9 minutes or until the internal temperature reaches 165 degrees.

While the meatballs were cooking I made the gravy. I mixed together 1 cup of warm water with 1 teaspoon of Better Than Bouillon beef base.

If you don’t have Better Than Bouillon you can use 1 cup of beef broth instead.

Add it to a small saucepan on medium heat. In a small bowl mix together 1 tablespoon of cornstarch with 2 tablespoons of water.

Once the beef broth starts to simmer whisk in the cornstarch mixture. Let it simmer for 5 minutes while occasionally whisking.

One serving is 4 meatballs with 2 tablespoons of gravy for 3 points.

Ingredients
For the meatballs:
  • 1 lb. 96% lean ground beef
  • 2 tablespoons breadcrumbs
  • 1 egg
  • 2 tablespoons skim milk
  • 1 tablespoon grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon parsley
  • 1 teaspoon Italian seasoning
For the gravy:
  • 1 teaspoon Better Than Bouillon beef base (mixed with once cup warm water)
  • 1 tablespoon cornstarch (mixed with 2 tablespoons water)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
Instructions
  1. Add the breadcrumbs, egg, skim milk, Parmesan cheese, minced garlic, salt, pepper, parsley, and Italian seasoning to a large mixing bowl. Mix together until well combined.

  2. Add the ground beef and combine.

  3. Use a cookie scoop to shape 20 meatballs and add them to the air fryer basket. Make sure the meatballs are in a single layer and not touching. Cook for 9 minutes at 400 degrees or until the internal temperature reaches 165 degrees.

For the oven:
  1. Preheat oven to 400 degrees F.

  2. Spray a baking sheet with nonstick cooking spray. Add the meatballs.

  3. Bake 13-15 minutes or until the internal temperature reaches 165 degrees F.

Making the gravy:
  1. Make the gravy while the meatballs are cooking. Add the Better Than Bouillon beef base (with 1 cup of water) to a small saucepan. Bring to a simmer.

  2. Mix together the cornstarch and water. Whisk the cornstarch mixture into the beef broth. Let it simmer for 5 minutes while occasionally whisking.
