This Chicken Tortilla Casserole is SO DELICIOUS!!
It’s also low in points and filling.
At only 6 points per serving, it’s perfect for dinner.

This recipe is perfect for a rotisserie chicken, or leftover chicken breast.
Besides the chicken, you only need a few basic ingredients to make this easy dish. It’s perfect for busy weeknights.
How I kept this recipe light:
I only used boneless, skinless chicken breasts since they’re zero points.
Instead of using corn tortillas or regular tortillas, I used Mission Carb Balance tortillas. They are two points each.
Ole Xtreme High Fiber tortillas used to be my favorite because they’re only 1 point. Once I tried the Mission brand I like it more even though it’s higher in points.
Reduced-fat Mexican cheese also helped to lower the points. It tastes like regular Mexican cheese but it’s lower in points.
I used corn and black beans mixed in with the chicken because they are both zero points.
How to make Chicken Tortilla Casserole:
Shred the cooked chicken and add it to a pan. Stir in the taco seasoning and water.
Cook over medium heat for 3-5 minutes. Add in the corn and black beans and remove from heat.
Take 4 tortillas and cut them into four pieces each.
Spray an 8×8 baking dish with cooking spray. Put one piece of tortilla in each of the corners and then a fifth one in the center.
Spread salsa over the tortillas, then add half of the chicken mixture and 1/2 cup cheese.
Repeat that layer again, tortillas, salsa, chicken mixture and cheese.
For the final layer add another layer of tortillas, top with salsa, then add 1 cup of cheese.
Bake at 350 for 20 minutes or until the cheese is melted.
I added fat-free sour cream and green onions when I served it. You can also add cilantro or any of your favorite toppings.

- 1/2 cup black beans, drained and rinsed
- 3/4 cup salsa, divided
- 4 Mission Carb Balance tortillas
- 2 cups reduced-fat Mexican cheese, shredded

Preheat oven to 350 degrees F. Spray an 8×8 baking dish with nonstick cooking spray.

Add the cooked chicken to a pan over medium heat. Stir in the taco seasoning and water. Cook 3-5 minutes.

Stir in the corn and black beans, then remove from heat.

Cut the four tortillas into four pieces each. Put one piece of tortilla in each of the corners and then a fifth one in the center.

Spread 1/4 cup of salsa over the tortillas and spread out evenly. Top with half of the chicken mixture and 1/2 cup of cheese.

Repeat that layer again, tortillas, salsa, chicken mixture, and cheese.
