This Creamy Garlic Chicken is delicious and low in points!

If you’re a garlic lover this recipe is for you!
How I kept it low in points:
I used boneless skinless chicken breasts since they are 0 points.
Instead of using butter or olive oil, I used a small amount of olive oil spray and a nonstick skillet.
Most creamy garlic chicken recipes use heavy cream. I used fat-free half and half mixed with chicken broth then thickened it with cornstarch.
There’s plenty of sauce so you could pour some over a serving of pasta.
How to make Creamy Garlic Chicken:
I bought thin chicken breasts for this recipe. If you have thick chicken breasts you can cut them in half and pound them out.
Season the chicken with salt and pepper. Spray a large nonstick skillet with olive oil spray, then add the chicken breasts.
Cook over medium heat 3-4 minutes on each side.
Push the chicken to the outside of the pan. Spray the center with olive oil, then add the garlic and cook for 1 minute.
Stir in the chicken broth followed by the half and half.
Bring the sauce to a simmer and whisk in the cornstarch mixture.
Let it cook for 2 more minutes or until the sauce thickens. Occasionally whisk the sauce while it’s cooking.
Place the chicken breast on a plate and spoon some sauce onto the chicken.
I topped my chicken with fresh parsley but you could also do green onions or Parmesan cheese.
Since the chicken is so low in points it’s perfect for adding a small amount of pasta.
If you’d rather keep it low in points you can serve it with vegetables and a side salad.

- 1 cup fat-free half and half
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1 tablespoon cornstarch (mix with 2 tablespoons of water)
