Creamy Garlic Chicken

Ingredients

  • 1 lb. boneless, skinless chicken breast (cut thin, 4 breasts)
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup fat-free half and half
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon cornstarch (mix with 2 tablespoons of water)
  • Olive oil spray

Instructions

  • Season chicken breasts with salt and pepper. Spray a large nonstick skillet with olive oil spray and add the chicken.
  • Cook over medium heat for 3-4 minutes on each side.
  • Push the chicken to the outside of the pan. Spray the center with olive oil, then add the garlic and sauté for 1 minute.
  • Stir in the chicken broth followed by the half and half. Bring the sauce to a simmer and whisk in the cornstarch mixture.
  • Let it cook for 2 more minutes or until the sauce thickens. Occasionally whisk the sauce while it's cooking.
  • Place the chicken breast on a plate and spoon some sauce onto the chicken.
