Creamy Garlic Chicken

Ingredients

lb.
boneless, skinless chicken breast (cut thin, 4 breasts)
3
cloves
garlic, minced
1/2
cup
chicken broth
1
cup
fat-free half and half
1/4
teaspoon
salt
1/8
teaspoon
black pepper
1
tablespoon
cornstarch (mix with 2 tablespoons of water)
Olive oil spray
Instructions
Season chicken breasts with salt and pepper. Spray a large nonstick skillet with olive oil spray and add the chicken.
Cook over medium heat for 3-4 minutes on each side.
Push the chicken to the outside of the pan. Spray the center with olive oil, then add the garlic and sauté for 1 minute.
Stir in the chicken broth followed by the half and half. Bring the sauce to a simmer and whisk in the cornstarch mixture.
Let it cook for 2 more minutes or until the sauce thickens. Occasionally whisk the sauce while it's cooking.
Place the chicken breast on a plate and spoon some sauce onto the chicken.
