There’s nothing better than coming home from a long day and your house smells like something delicious cooking in the slow cooker.
We’re talking real food, not fast food! This delicious recipe is an easy dump and go.
If you have about 10 minutes in the morning to get this ready, dinner will be waiting for you when you get home.

I counted this recipe as two servings. Each serving is a heaping 2 cups. Since potatoes and chicken are 0 points for me it’s only 4 points per serving.

If your points are higher you can always adjust the serving size.
There are a few things I did to lighten up this recipe. Instead of using regular cream of chicken soup I used 98% fat free cream of chicken soup.
Instead of using regular milk I used skim milk.
A lot of creamy chicken stew recipes use butter, I left it out to save points.
How to make Chicken Ranch Stew:
The first thing you want to do is cut up the vegetables. I used celery, carrots, onion and red potatoes.
Next I cut the boneless, skinless chicken breast into bite-size pieces.
To make the creamy ranch sauce I put the cream of chicken soup in a medium bowl. Then I added the skim milk, chicken broth and ranch packet. Whisk it together.
Add the vegetables to the bottom of the crock pot. Top the vegetables with chicken and make sure to spread out the chicken pieces.
Pour the creamy ranch sauce over the chicken and vegetables and put the lid on the crock pot.
Set the temperature to low heat and let it cook for 6 hours.
After six hours the chicken should be tender and the potatoes soft.

For me doing food videos I want my nails to look nice, but I don’t have the time (or want to spend the money) to go get them done. These are perfect and only take about 10 minutes to put on.

- 3/4 lb. boneless, skinless chicken breast
- 1 cup chicken broth
- 1/2 cup skim milk
- 10.5 oz. 98% fat free cream of chicken condensed soup
- 1/2 cup celery, chopped
- 1/2 cup carrots, chopped
- 1 small onion
- 1/2 lb. red potatoes, cut into small pieces
- 1 ranch seasoning packet (1 oz.)

Chop the vegetables and add them to the slow cooker.

Cut the chicken breast into bite-size pieces and add to the slow cooker.

In a medium bowl whisk together the cream of chicken soup, chicken broth, milk and ranch seasoning. Pour over the chicken and vegetables.

Place the lid on the slow cooker and cook on low for 6 hours.
