Stuffed peppers scream comfort food to me. I had a craving for them, but didn’t want to make them and wait for them to bake.
So instead, I made it into soup. I got the stuffed pepper taste and it only took about 30 minutes!
I tracked this recipe as four servings. They are LARGE servings, and only 3 points each!

This recipe is very versatile. I used fat-free turkey breast to reduce the points, but if you really want to use ground beef you can. Just make sure to figure out the points.
I used one green pepper and one red pepper. You could always do two green, or two red.
The points in this recipe come from the rice. I used one cup which was 11 points.
If you want to omit the rice it would make the stuffed pepper soup zero points.
Personally, the rice is one of my favorite parts of the soup. I’ll take the points!
Making the soup is extremely easy. I started by browning the turkey breast with chopped onions and minced garlic.
While that was cooking I started chopping the peppers.
When the turkey was cooked, I drained it. Then I added the peppers, beef broth, tomato sauce, Worcestershire sauce, Italian seasoning, salt and pepper.
I let that simmer, then I added the rice and let it cook 5 minutes. Dinner was done in about 30 minutes!

Yield: 4 servings (3 points per serving for blue and purple, 5 points for green)
- 1 lb. fat-free ground turkey breast
- 1/2 onion, chopped
- 1 clove garlic, minced
- 4 cups beef broth
- 15 oz. tomato sauce
- 1 teaspoon Worcestershire sauce
- 1 green pepper
- 1 red pepper
- 1 teaspoon Italian seasoning
- 1 cup instant rice
- Salt and pepper, to taste

Brown the ground turkey, onion and garlic.

While the turkey cooks, chop the peppers.

Drain the turkey, then add the peppers, beef broth, tomato sauce, Worcestershire sauce and Italian seasoning. Bring to a simmer and cook for 20 minutes.

Add the rice and simmer for 5 minutes. Enjoy!
