Chicken Ranch Stew

Ingredients

  • 3/4 lb. boneless, skinless chicken breast
  • 1 cup chicken broth
  • 1/2 cup skim milk
  • 10.5 oz. 98% fat free cream of chicken condensed soup
  • 1/2 cup celery, chopped
  • 1/2 cup carrots, chopped
  • 1 small onion
  • 1/2 lb. red potatoes, cut into small pieces
  • 1 ranch seasoning packet (1 oz.)

Instructions

  • Chop the vegetables and add them to the slow cooker.
  • Cut the chicken breast into bite-size pieces and add to the slow cooker.
  • In a medium bowl whisk together the cream of chicken soup, chicken broth, milk and ranch seasoning. Pour over the chicken and vegetables.
  • Place the lid on the slow cooker and cook on low for 6 hours.
