Chicken Tortilla Casserole

Ingredients

  • 2 boneless, skinless chicken breasts, cooked and shredded
  • 1 tablespoon taco seasoning
  • 1/2 cup water
  • 1/2 cup corn
  • 1/2 cup black beans, drained and rinsed
  • 3/4 cup salsa, divided
  • 4 Mission Carb Balance tortillas
  • 2 cups reduced-fat Mexican cheese, shredded

Instructions

  • Preheat oven to 350 degrees F. Spray an 8x8 baking dish with nonstick cooking spray.
  • Add the cooked chicken to a pan over medium heat. Stir in the taco seasoning and water. Cook 3-5 minutes.
  • Stir in the corn and black beans, then remove from heat.
  • Cut the four tortillas into four pieces each. Put one piece of tortilla in each of the corners and then a fifth one in the center.
  • Spread 1/4 cup of salsa over the tortillas and spread out evenly. Top with half of the chicken mixture and 1/2 cup of cheese.
  • Repeat that layer again, tortillas, salsa, chicken mixture, and cheese.
  • For the final layer add another layer of tortillas, top with salsa, then add 1 cup of cheese.
  • Bake at 350 for 20 minutes or until the cheese is melted.
