I love easy dinner recipes! This Beef Noodle Casserole is definitely one of them.
It’s a really good casserole with simple ingredients.
Most of the ingredients are ones I usually have on hand.

Ground beef, egg noodles, tomato sauce, diced tomatoes, and cheese are the main ingredients. There’s also onion, garlic, and seasonings that add so much flavor.
I love that this casserole is not only WW friendly but also family and kid friendly.
It’s a great way to stay within your points while feeding the whole family.
Leftovers are also perfect for lunch the next day!
How I kept this casserole light:
I used 96% lean ground beef in this dish. One pound is only 12 points. You could also use ground turkey.
Using a food scale to weigh the noodles help keep the points accurate. I only used 10 ounces of wide egg noodles which was 27 points.
Instead of using regular cheese I used reduced fat cheddar cheese. You can use mild or sharp cheddar cheese.
I also chose not to use olive oil. I started browning the ground beef, then added my onion to cook.

How to make Beef Noodle Casserole:
Boil a large pot of water and cook the egg noodles according to the package directions. Mine said 7 to 9 minutes and I went with 7 since I was putting it in the oven for a few minutes.
Add the ground beef to a large skillet. Cook beef over medium heat while breaking it up into small pieces. Season with salt and pepper.
Once the beef is slightly brown add the onion and garlic.
When the beef is completely browned drain any grease.
Add the tomato sauce, diced tomatoes, and Italian seasoning. Once the meat mixture starts to simmer turn off the heat.
Stir in the egg noodles then add them to a 9×13 baking dish.
Top the noodles with cheese then bake for 10 minutes, or until the cheese is completely melted.
Make ahead tips:
This casserole is perfect for making ahead of time.
Simply follow the directions right up until the baking point. Cover the dish with plastic wrap or aluminum foil and keep in the fridge until the next day.
Add 15-20 minutes to the baking time since it is refrigerated.

- 15 oz. tomato sauce
- 14.5 oz. diced tomatoes (drained)
- 1 teaspoon Italian Seasoning
- 1 cup reduced-fat cheddar cheese, shredded
- Salt and pepper, to taste

Preheat oven to 400 degrees F.

We really enjoyed this dish tonight! I changed it up a bit to suit our tastes. I used a mix of ground turkey breast and extra lean ground beef, and only half of the 10 ounces of noodles. We like the whole wheat noodles and to make it a bit more saucy, I added another small can of tomato sauce. Each person topped their serving with cheese instead of putting it into the main mix. No oven needed here! I served it straight from the pan.

I only made one change and that was to reduce the amount of egg noodles to 8 ounces and only did that so I could reduce the WW points value so it wouuld fit into my points total for that day.
