Preheat oven to 400 degrees F.
Boil a large pot of water and cook the egg noodles according to the package directions. Do not overcook.
Add the ground beef to a large skillet. Cook beef over medium heat while breaking it up into small pieces. Season with salt and pepper.
Once the beef is slightly brown add the onion and garlic.
When the beef is cooked through drain any grease.
Add the tomato sauce, diced tomatoes, and Italian seasoning. Bring the meat mixture to a simmer then turn off the heat. Stir in the egg noodles.
Pour into a 9x13 baking dish and top with the cheese.
Bake for 10 minutes or until the cheese is completely melted.
