These delicious Mediterranean Bowls are full of veggies, roasted chickpeas, and a delicious tzatziki sauce.
They’re also very low in points, only 2 points per bowl!

How I kept it low in points:
The only thing in this recipe that added points was the feta cheese. I used reduced-fat feta cheese to lower the points.
Tzatziki sauce is made up of yogurt, garlic, cucumber, and herbs. I used fat-free Greek yogurt since it’s zero points.
There is so much flavor from the garlic, cucumber, and herbs that you can’t even tell it’s not regular yogurt.
Also, fat-free Greek yogurt is is a great source of calcium, potassium, protein, zinc, vitamins B6 and B12.
How to make Mediterranean Bowls:
The first step is roasting the chickpeas. You can do it in the air fryer or a skillet.
Open the chickpea can, drain and rinse the chickpeas, then dry them off.
I roasted my chickpeas in the air fryer, add them to the air fryer, sprayed them with olive oil spray, seasoned with Greek seasoning, and then cooked them for 10 minutes at 400 degrees.
To roast them in a skillet, add them to the pan, spray with olive oil, add the seasoning, then cook for 7-10 minutes, or until the chickpeas are crispy.
While the chickpeas were cooking I made the tzatziki sauce.
Add the fat-free Greek yogurt to a small bowl. Shred two tablespoons of cucumber and add it to the yogurt.
Also add the lemon juice, dill, garlic powder, salt, and pepper.
Stir together and set aside.
Start assembling the bowls. Add the lettuce (1 1/2 cups per bowl), 2 tablespoons of feta cheese, chickpeas, cucumbers, tomatoes, and red onions.
Top each bowl with 2 tablespoons of the tzatziki sauce.
If you are making these bowls for meal prep I would wait until you are ready to eat it to add the tzatziki sauce.

- Olive oil spray
- 1 (15 oz.) can of chickpeas
- 1 teaspoon Greek seasoning
- 1/2 cup fat-free Greek yogurt
- 2 tablespoons shredded cucumber
- 1/2 tablespoon lemon juice
- 1/2 teaspoon dried dill
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 6 cups romaine lettuce
- 1 English cucumber
- 1/2 cup reduced-fat feta cheese
- Cherry tomatoes, cut in half
- Red onion, chopped

Drain and rinse the chickpeas. Lay on a towel and dry them off.

Add the chickpeas to an air fryer or skillet. Spray with olive oil cooking spray and add the Greek seasoning.

Cook for 10 minutes at 400 degrees in the air fryer. If cooking in a skillet cook over medium heat for 7-10 minutes, or until the chickpeas are crunchy.

In a small bowl add the Greek yogurt, shredded cucumber, lemon juice, dill, garlic powder, salt, and pepper. Mix together.

Add 1 1/2 cups of lettuce to each bowl. Top each one with 2 tablespoons of feta cheese, cucumber, cherry tomatoes, red onion, and 2 tablespoons of the tzatziki sauce.
