I love salt and vinegar potato chips!
Obviously, the regular chips aren’t very WW friendly. But if you bake or air fry them they’re much lower in points!

It’s funny because when I was younger I hated salt and vinegar chips. People I worked with loved them, but I didn’t understand why.
A few years ago I tried them again, then I understood. They were so good!
I knew I had to lighten them up by baking or air frying them.
They turned out SO GOOD and they’re much lower in points.
I used a 7 ounce russet potato that I peeled and sliced. I used a mandoline and was able to get 30 potato slices.
There were 2 servings, 15 potato chips per serving and it was only 2 points!

How to make Salt and Vinegar Baked Potato Chips:
The first thing I did was peeled the potato. This is optional, you can leave the skin on if you prefer.
I used a mandoline to slice the potatoes 1/8 inch thick.
Add vinegar to a medium bowl and soak the potato slices.
The potato slices need to soak 15-30 minutes. If you like a strong vinegar flavor go the full 30 minutes.
Place the potatoes on a clean towel or paper towel. Also, dab the top of the potatoes to dry them off.
If you’re baking the chips in the oven, add the slices in a single layer to a baking sheet lined with parchment paper.
Spray both sides of the potatoes with olive oil spray and add sea salt.
Bake at 325 degrees F. for 20 minutes, flipping halfway through.
To cook them in the air fryer, add the slices in a single layer. Spray with olive oil spray and add sea salt.
Turn the air fryer to 350 for 10 minutes, turning halfway through.
I had to do two different batches in the air fryer. You don’t want to crowd the potatoes.
Personally, I prefer making chips in the air fryer vs. the oven. If you don’t have an air fryer they’re still really good if you bake them.

- 1 Russet potato (7 ounce potato)
- 16 oz. distilled white vinegar
- 1/2 teaspoon sea salt
- Olive oil spray

Peel the potato and run through a mandoline at 1/8 inch thickness.

Add the vinegar to a medium bowl and put the potato slices in the vinegar. Let it sit 15-30 minutes.

Place the potato slices on a clean towel or paper towel. Also, dab the top of the potato slices to dry them off.

Add the potato slices to the air fryer basket in a single layer. (I had to do two batches.) Spray the potatoes with olive oil spray and sea salt.

Cook at 350 degrees for 10 minutes, flipping halfway through.

Preheat oven to 375 degrees F.

Line a baking sheet with parchment paper. Add the potato slices in a single layer. Spray with olive oil and add the sea salt.

Bake for 20 minutes, flipping halfway through.
