These sweet potato chips are a delicious crunchy snack!
They can be made in the air fryer or baked in the oven. Both ways will give you crispy sweet potato chips.
The smell of these sweet potatoes cooking is so good!

I seasoned the potatoes with brown sugar and cinnamon. Yum!
A medium sized sweet potato is 6 points for blue and green, 0 points for purple.
The other ingredient in the recipe that adds points is the brown sugar. I used 1 tablespoon which was 2 points for all three plans.
You could always omit the brown sugar and cinnamon and just stick with salt. Or mix up the seasonings all together!
Let the potatoes cool for 5-10 minutes out of the oven, they will crisp up.
If you make these sweet potato chips in the air fryer you will have to do it in batches. They need to cook in a single layer.
This recipe can easily be doubled. You can store the sweet potato chips in an air tight container for a couple of days.

Yield: 2 servings (1 point per serving for purple, 4 points per serving for blue and green)

- 1 medium sweet potato, peeled
- 1 tablespoon brown sugar
- 1/4 teaspoon cinnamon
- 1/8 teaspoon salt
- Olive oil spray

Preheat air fryer at 350 F for 4 minutes.

Run the sweet potato through a mandoline. You want the slices to be thin.

Put potatoes in a bowl or baggie. Spray with olive oil then add the brown sugar, cinnamon and salt. Mix the potatoes up.

Put potatoes in the air fryer in a single layer (you will have to do more than one batch). Cook for 9 minutes flipping half way through.

Preheat oven to 350 degrees F.

Run the sweet potato through a mandoline. You want the slices to be thin.

Put potatoes in a bowl or baggie. Spray with olive oil then add the brown sugar, cinnamon and salt. Mix the potatoes up.

Put potatoes on a baking sheet lined with parchment paper. Make sure they are in a single layer.

Bake for 20 minutes, flip then continue baking 20 minutes or until the potatoes have a nice golden color.
