Chicken Chile Verde is an easy Mexican stew. You can serve it with rice, on a tostada shell, in a taco or burrito.

This is probably one of the easiest recipes I’ve ever made.
Instead of buying tomatillos and peppers to make my own sauce I used salsa verde. It was much easier but still full of flavor.
Using a cooked rotisserie chicken from the grocery store helped save time too. You could also use leftover cooked chicken breast.
How to make Chicken Chile Verde:
The first thing I did was got my chicken ready. Remove the skin and shred the chicken breast.
Add the salsa verde, shredded chicken breast, garlic, cumin, oregano and cilantro to a medium saucepan.
Turn the heat to medium and let it simmer for 5 minutes.
Stir in 1 tablespoon of fresh lime juice and dinner is done!
I like to serve my Chicken Chile Verde with fat free sour cream and cilantro. Since the recipe is 0 points for me I don’t feel bad about serving it with regular rice.
If I serve it with 1/2 cup of cooked white rice it’s still only a 3 point meal for me.
Another thing I love about Chicken Chile Verde is that it’s great leftover. It’s perfect for lunch the next day!
It’s also easy to make a double batch and freeze some. Let the Chicken Chile Verde come to room temperature then put it in a freezer safe container or freezer bag.
To reheat it I put it in the fridge over night then add it to a saucepan the next day and heat through. You could also heat it up in the microwave.

- 2 cups cooked boneless, skinless chicken breast, shredded
- 16 oz. salsa verde
- 2 cloves garlic, minced
- 1/2 teaspoon cumin
- 1/2 teaspoon oregano
- 1/4 cup cilantro, chopped
- 1 tablespoon fresh lime juice
- Salt and pepper, to taste

Add the chicken, salsa verde, garlic, cumin, oregano and cilantro to a medium saucepan. Let simmer for 5 minutes then stir in the lime juice.
