These Chimichangas are baked instead of fried to lighten them up – and they’re delicious!
One whole Chimichanga is only 3 points for blue and purple, 5 points for green. That’s a lot of food for not a lot of points.

I filled my Chimichanga with chicken, refried beans, salsa, Mexican cheese, cilantro, cumin and garlic powder. You can always change up the ingredients to make it your own.

Instead of regular salsa you can try salsa verde. You could also add onions to the mix.
I used chicken since it’s 0 points for blue and purple. To make this recipe even easier I bought a cooked rotisserie chicken from the grocery store and used the breasts.
The rest of the chicken never goes to waste in my house. My kids love to eat the chicken legs and my cat and dog both get bites of the chicken thighs. 🙂
Funny enough I think my cat actually prefers chicken breast. Sometimes she won’t eat the thigh meat but if I give her the chicken breast she’ll eat it.
Once again I used the Ole Xtreme high fiber tortillas since they’re only 1 point each. That’s for blue, green and purple! I find them at the grocery store right by the other tortillas.
I’ve had other low point tortillas that were ok, but I really like the Ole Xtreme tortillas.
I like topping my Chimichanga with fat free sour cream because it’s only 1 point. You can also top it with salsa or tomatoes, cilantro or even guacamole.
Sometimes I buy the Wholly Guacamole 100 calorie cups because they’re only 3 points for the whole cup. I can have 1/3 of the cup for only 1 point.
Even though these Chimichangas are baked they still come out crispy. Just a little spray of olive oil does the trick.

BBQ Chicken Wraps

Yield: 4 Chimichangas (Each chimichanga is 3 point for blue and purple, 5 points for green)

- 2 cooked chicken breasts, shredded
- 1/2 cup salsa
- 1/2 cup reduced-fat Mexican cheese, shredded
- 2 tablespoons cilantro, chopped
- 1/4 teaspoon cumin
- 1/4 teaspoon garlic powder
- 1/2 cup refried beans
- 4 Ole Xtreme high fiber tortillas

Preheat oven to 400 degrees F.

Add the shredded chicken to a large mixing bowl. Add the salsa, Mexican cheese, cilantro, cumin and garlic powder then stir together.

Lay out a tortilla. Spread the refried beans across the center, then add 1/4 of the chicken mixture. Roll the bottom part of the tortilla over the chicken, fold in the sides then roll up. Set on a baking sheet seam side down. Repeat with the other three tortillas.

Spray all four chimichangas with olive oil spray. Bake for 25 minutes.
