If you’ve tried my Chicken Enchilada recipe you’re going to love these Bubble Up Enchiladas!
The Chicken Enchiladas are one of my most popular recipes. They are delicious and low in points.
Bubble up recipes are also very popular. So I figured why not combine them both!?

It’s another easy meal that’s low in points.
I broke it down to six servings. For blue and purple it is 5 points per serving, green is 6 points per serving.

You only need a few basic ingredients for this recipe:
- 2 cups salsa verde
- 2 cups cooked chicken
- 1/2 cup fat free sour cream
- 1/8 teaspoon garlic powder
- 1 cup reduced fat Mexican cheese
- 6 oz. biscuits

If you don’t have a Kroger by you you can use any type of biscuit, just doublecheck the points. Five of these biscuits is 17 points.
To make this recipe even easier I bought a rotisserie chicken that was already cooked. I only used the chicken breasts.
This recipe only takes about 10 minutes to prep. To start I added the salsa verde, sour cream and garlic powder to a mixing bowl and whisking it together.
Then I stirred in part of the cheese and the chicken.
I cut each of the biscuits into 8 pieces and added that to the salsa verde mixture.
Next, I added everything to a 2.5 quart casserole dish. I added the rest of the cheese and baked it for 30 minutes.
You can top it with fresh cilantro and sour cream or eat it as is!

Yield: 6 servings (5 points per serving for blue and purple, 6 points for green)

- 2 cups chicken breast, cooked and shredded
- 1 cup reduced fat Mexican cheese, shredded, divided
- 6 oz. pre-made biscuit dough

Preheat the oven to 350 degrees F.

Add the salsa verde, sour cream and garlic powder to a mixing bowl and whisk together.

Stir in the chicken breast and 1/3 cup of the Mexican cheese.

Cut each biscuit into 8 pieces. Stir into the salsa verde mixture.

Spray a 2.5 quart casserole dish with no-stick spray and pour the mixture into it. Top with the remaining Mexican cheese.

Bake for 30 minutes.

Excellent flavor and I like how you can adjust how spicy. you want it. My only complaint is that I never could get all the biscuits done. I finally had to pick through the casserole and pick out the biscuits that never cooked. Not sure what what I did wrong. That’s the only reason I gave it 4 stars.
