This Sausage and Potato Hash is such a filling breakfast!
There’s sausage, potatoes, peppers and onions then topped off with an egg.
It’s only 3 points for purple, 5 points for blue and 7 points for green.

To make this lighter in points I used turkey sausage. If you haven’t tried turkey sausage you should. It’s really good and saves a lot of points.
I used 4 oz. of Jennie O breakfast sausage patties which was only 5 points. 4 oz. of pork sausage would have been 12 points.
The most important thing I did for this recipe was to weigh out the ingredients. I used 8 oz. of Yukon gold potatoes which was 5 points for blue and green.
It’s surprising how many potatoes you get for only 8 ounces!
You can peel the skin off the potatoes or leave it on, whatever your personal preference is.
I also added some red peppers and onions. Feel free to add in any vegetables you like! If you don’t like red peppers you can switch them out for green peppers. This recipe is very versatile.
Cook the egg how ever you prefer, I chose sunny side up. I’ve also had it with scrambled eggs and that was really good too.
This Sausage and Potato Hash is so filling I don’t even need a snack before lunch. It keeps me full for hours!

Yield: 2 servings ( 3 points per serving for purple, 5 points for blue and 7 points for green)
- 4 oz. Jennie O breakfast turkey sausage patties
- 8 oz. Yukon gold potatoes, cut into small cubes
- 2 tablespoons chopped onion
- 2 tablespoons chopped red pepper
- 1 clove garlic, minced
- Salt and pepper, to taste
- 2 eggs

Spray a non-stick pan with olive oil then add the potatoes, onions, red pepper and garlic. Cook for 7 minutes stirring occasionally.

Push the potatoes to one side of the pan and add the turkey sausage. Break the sausage up into small pieces and cook thoroughly.

Stir the sausage and potatoes together and season with salt and pepper.

Cook the 2 eggs however you like them – sunny side up, scrambled, over easy etc.

Divide the hash into to bowls then top with eggs.
