This bubble up breakfast casserole is easy to make and great for meal prep!
I cooked this in a 8×8 pan and counted it as 6 servings. It reheats well so that gave me breakfast for a few days.
I pre-cut the servings and stored it in the fridge, then just popped it in the microwave for 30-45 seconds.
This recipe is also versatile. The eggs, milk and biscuits are the base of the recipe. I added ham, green pepper and onion.
You could always change up the vegetables, or even use turkey sausage instead of ham. Just make sure to double check the point value.

To make the bubble up breakfast casserole I started by chopping the veggies. I used about 1/4 of the green pepper and 1/4 of a small onion.
The ham I bought was already chopped, so I didn’t have to do anything with that besides measure out 1/4 cup. I used Kroger brand chopped ham which is 1 point for 1/4 cup.
I added 6 eggs to a mixing bowl with 1/2 cup of milk. I whisked it together, then added the green pepper, onion, cheeses, garlic powder, salt and pepper.
Next I cut each biscuit into 8 pieces. I only used 4 biscuits, but that gave me 32 biscuit pieces.
They get dropped into the egg mixture and stirred up, then add it all to the baking dish.
It goes in the oven for 25 to 30 minutes, once the biscuits are golden and the eggs have set.
Once it’s out of the oven I let it cool for 5 to 10 minutes.
Like I said, if you don’t like ham, green peppers or onions you can always change it up and make it your own.

Yield: 6 servings
Points per serving: 5 (blue), 7 (green), 5 (purple)
- 6 eggs
- 1/2 cup skim milk
- 1/4 cup diced ham
- 1/4 green pepper
- 1/4 onion
- 2 oz. reduced-fat cheddar cheese
- 4 oz. part-skim mozzarella cheese
- 4 biscuits
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/8 teaspoon pepper

Preheat oven to 350 degrees F.

Add the eggs and milk to a mixing bowl and whisk together.

Chop the green pepper and onion and add it to the eggs with the cheddar cheese, mozzarella cheese, garlic powder, salt and pepper.

Cut each biscuit into 8 pieces and add to the egg mixture. Stir everything together.

Spray an 8×8 pan with no-stick cooking spray then add the egg mixture. Make sure the biscuits are spread out evenly.

Bake 25-30 minutes, or until the biscuits are golden and the eggs are set. Let cool 5-10 minutes before serving.

I use the biscuits in the tube. I found a junior roll that comes with only 5 biscuits.
