Bubble Up Breakfast Casserole

Ingredients

  • 6 eggs
  • 1/2 cup skim milk
  • 1/4 cup diced ham
  • 1/4 green pepper
  • 1/4 onion
  • 2 oz. reduced-fat cheddar cheese
  • 4 oz. part-skim mozzarella cheese
  • 4 biscuits
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  • Preheat oven to 350 degrees F.
  • Add the eggs and milk to a mixing bowl and whisk together.
  • Chop the green pepper and onion and add it to the eggs with the cheddar cheese, mozzarella cheese, garlic powder, salt and pepper.
  • Cut each biscuit into 8 pieces and add to the egg mixture. Stir everything together.
  • Spray an 8x8 pan with no-stick cooking spray then add the egg mixture. Make sure the biscuits are spread out evenly.
  • Bake 25-30 minutes, or until the biscuits are golden and the eggs are set. Let cool 5-10 minutes before serving.
