These strawberry cupcakes are only 2 points each!! Green, blue or purple…it doesn’t matter!
And they taste great! If you need a sweet fix this will do the trick.
I used Pillsbury sugar-free yellow cake mix for this recipe. To give it a strawberry flavor I added 12 oz. of diet strawberry pop.
I live in Michigan where we have Faygo pop. It is really good!! I used Faygo diet strawberry, but any diet strawberry pop will do.
I have also made Orange Creamsicle Cupcakes which were really good!
If this is your first time mixing soda with cake mix it probably sounds weird. I don’t know why it works, but it does!
You don’t need to use eggs, oil or water, just the diet strawberry pop.

I used fat free Cool Whip for the topping, but you can also use fat-free whipped cream. I did a small line around the cupcake, then filled the center with fresh cut strawberries.
This recipe makes 24 cupcakes. I don’t put the topping on until I’m ready to eat the cupcakes.
Making the cupcakes is very easy. You just mix together the sugar-free cake mix and the diet strawberry pop with a hand-held mixer for 2 minutes.
Next you add the cake batter to cupcake liners and bake 18-23 minutes.
While the cupcakes were baking I chopped up the strawberries.
I let the cupcakes cool completely before adding the toppings.

Yield: 24 cupcakes (2 points per cupcake following WW blue, purple or green)
- 1 box Pillsbury sugar-free yellow cake mix
- 12 oz. diet strawberry pop
- 1 pint strawberries
- 4 oz. fat-free Cool Whip or fat-free whipped cream

Preheat oven to 325 degrees F.

Add the cake mix and strawberry soda to a mixing bowl.

Use a handheld mixer and mix batter on low for 2 minutes.

Line a cupcake pan with liners and fill each one up half way with the cupcake batter.

Bake 18-23 minutes or until a toothpick inserted in the center comes out clean.

While the cupcakes are baking chop the strawberries into small pieces.

Let the cupcakes cool completely, then add a circle of whipped topping around the edge and fill with chopped strawberries.
