These Blueberry Sweet Rolls are a delicious breakfast, or dessert!
They’re so good and only 2 points each with my WW Personal Points.

I only like blueberries when they’re cooked or baked. I love the sweetness of the cooked berries and the bright purple color.
To keep the Blueberry Sweet Rolls low in points I made them with two ingredient dough.
A regular Blueberry Sweet Roll can be as much as 10 points, that’s for one roll!
How to make Blueberry Sweet Rolls:
I started by making the blueberry mixture. I added blueberries, sugar free maple syrup and cornstarch to a small saucepan.
Let the blueberries come to a light simmer then cook on low heat for 5 minutes.
You should be able to use a fork and break down the blueberries. You don’t want them to be too chunky or it will make the dough difficult to roll up.
Remove the blueberries from heat and let it cool.

Now it’s time to make the dough. Combine the self-rising flour and fat-free Greek yogurt and mix together. Knead the dough for about two minutes.
Place the dough on a work surface that’s dusted with flour.

Roll out the dough and shape it into a rectangle. Pour the blueberry mixture on top of the dough.

Don’t go all the way to the edge with the dough, that way when you roll the dough it doesn’t make a mess.
I used a scraper to help loosen the dough. I did about 1 inch at a time until the dough was rolled up.
Use a sharp knife and cut the log into 1 inch pieces, I was able to get 9 rolls.
Spray a baking pan with nonstick cooking spray and add the blueberry rolls.

I brushed the rolls with an egg wash then baked them for 25 minutes.
Once the Blueberry Sweet Rolls cooled off I topped them with 1 teaspoon of powdered sugar. It was only 1 point.
You can also use fat free Reddi Whip or serve with low point ice cream.

Yield: 9 rolls

- 6 oz. blueberries
- 1 tablespoon sugar free maple syrup
- 1/2 teaspoon cornstarch
- 1 cup fat free Greek yogurt
- 1 cup self-rising flour
- 1 egg (mixed with 1 tablespoon water)

Preheat oven to 350 degrees F.

Add the blueberries, syrup and cornstarch to a small saucepan. Bring to a light simmer then reduce heat to low. Cook for 5 minutes. Use a fork to break down the blueberries then remove from heat to let cool.

Combine self-rising flour and fat-free Greek yogurt in a mixing bowl and stir together.

Knead dough for about 2 minutes.

Sprinkle flour onto your work surface and roll out dough until it is about 1/4 inch. Cut dough into a rectangle. You can discard the extra dough.

Spread the blueberry mixture onto the dough. Roll the dough up and cut into 1 inch pieces.

Spray a baking dish with nonstick cooking spray and add the blueberry rolls.

Whisk together the egg and water then brush onto the dough. Bake 25 minutes or until the dough is golden and cooked through.
