Stuffing meatballs with cheese sounds delicious, right!?
It is! I took my regular meatball recipe and added a piece of mozzarella cheese to the center. I don’t know if I’ll ever make them without cheese again.
They are filling and delicious!

I used Sargento light string cheese to stuff the meatballs with. Two pieces was 3 points.
Each piece of string cheese was cut into 5 pieces, giving me 10 pieces total.
Any kind of light string cheese will work, just check that the points are the same.
How to make Cheese Stuffed Meatballs:
Start by adding the egg, Parmesan cheese, Italian breadcrumbs, garlic, parsley, salt and black pepper to a large bowl.

Mix the ingredients together then add in the ground beef. Mix everything together.

Divide the mixture into 10 even sized meatballs. Roll each ball then stuff a piece of cheese into the center. Make sure to wrap the meat around the cheese and completely seal it.
Place the meatballs on a baking sheet.

Bake the meatballs for 25 minutes at 400 degrees.

Now you can eat the flavorful meatballs with gooey mozzarella cheese. They’re so good!
I like to serve my cheesy meatballs with some marinara sauce and a salad. You could also add spaghetti noodles or zucchini noodles.

- 1 lb. 96% lean ground beef
- 1 egg
- 1/4 cup grated Parmesan cheese
- 1/4 cup Italian breadcrumbs
- 2 cloves garlic, minced
- 1 teaspoon dried parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 pieces Sargento light string cheese

Preheat oven to 400 degrees F.

In a large bowl mix together the egg, Parmesan cheese, Italian breadcrumbs, garlic, parsley, salt and black pepper.

Add the ground beef and mix together. Divide the meat mixture into 10 even sized meatballs.

Cut each piece of string cheese into 5 pieces, you should have 10 pieces total.

Press the cheese into the meatball then cover the cheese and seal. Place on a baking sheet. Repeat with the remaining ingredients.

Bake for 25-30 minutes. Enjoy!
