I used 1.5 pounds of baby potatoes. This recipe makes 6 servings which is 2-3 baby potatoes per serving depending on the size of the potatoes.
You can use baby gold potatoes or baby red skin potatoes. Both taste delicious!
How to make Ranch Smashed Potatoes:
Start by boiling the baby potatoes 15-20 minutes. You should be able to easily pierce them with a fork. They should be soft enough to smash.
Spray a baking sheet with nonstick cooking spray and add the potatoes. Evenly space them out so they can spread out when smashed.
Use a potato masher or the bottom of a glass to smash the potatoes.
Sprinkle the ranch seasoning mix over the potatoes. Then spray the potatoes with olive oil spray.

At this point I usually add salt and some black pepper.
Place potatoes in the oven and bake 25 minutes or until the edges of the potatoes are crispy.
These potatoes taste great with everything! You can eat them as is or top with sour cream.

Yield: 6 servings (2-3 potatoes per serving depending on the size)

- 1 tablespoon ranch seasoning mix
- Olive oil spray
- Salt and black pepper, to taste

Drain the potatoes. Spray a baking sheet with olive oil spray and evenly space out the potatoes.

Use a potato masher or the bottom of a glass to smash the potatoes. Sprinkle the top of each potato with ranch then spray with olive oil.

Bake at 425 degrees for 20 minutes or until the edges are crispy.
